用途：生化研究。蛋白质水解酶中的氨肽酶类之一。这类酶能从多肽链上游离的氨基末端（N端）由外向里逐个地把氨基酸切下。亮氨酸氨肽酶不是因为只能水解以亮氨酸（Leu）为N末端残基的肽键，而是水解以亮氨酸为N末端的肽键速度为zui快才有这一名称由来。实际上它同样可作用于N末端的其他氨基酸。Mg2+或Mn2+是该酶催化作用所必需的。早期它常用于对多肽的氨基酸序列测定。
